🧂 Step 1: Prepare the Idli Batter

You can use homemade or store-bought batter. To make it from scratch:

  • Ingredients:

    • 2 cups idli rice

    • ½ cup urad dal (split black gram)

    • 1 tsp fenugreek seeds (optional)

    • Salt to taste

  • Instructions:

    1. Soak rice, dal, and fenugreek seeds separately for 4–6 hours.

    2. Grind dal until fluffy; grind rice to a slightly coarse texture.

    3. Mix both, add salt, and let ferment overnight (8–12 hours) until batter rises.

🍽️ Step 2: Prepare the Idli Maker

  • Grease each idli mold lightly with oil to prevent sticking.

  • Pour water into the base of the idli steamer (about 1½ cups).

  • Place the greased idli plates into the stand.

🥄 Step 3: Pour the Batter

  • Stir the fermented batter gently.

  • Fill each mold about ¾ full to allow space for rising.

  • Stack the plates in the stand and place inside the idli maker.

🔥 Step 4: Steam the Idlis

  • Cover the idli maker with its lid.

  • Steam on medium heat for 10–12 minutes.

  • To check doneness, insert a toothpick—it should come out clean.

🧊 Step 5: Cool and Serve

  • Turn off the heat and let the idlis rest for 2–3 minutes.

  • Use a spoon or butter knife to gently scoop them out.

  • Serve hot with coconut chutney, sambar, or podi.
