How To Make Carbonara?
๐งบ 1. Gather Ingredients
200g spaghetti
100g pancetta or guanciale (or thick-cut bacon)
2 large egg yolks
1 whole egg
½ cup grated Parmesan or Pecorino Romano
Salt and black pepper
Optional: garlic clove (for rubbing the pan)
๐ง 2. Cook the Pasta
Bring a pot of salted water to a boil.
Cook spaghetti until al dente (firm to the bite).
Reserve ½ cup pasta water, then drain.
๐ช 3. Prepare the Sauce Base
In a bowl, whisk together:
2 egg yolks + 1 whole egg
Grated cheese
A generous pinch of black pepper
๐ณ 4. Cook the Meat
In a pan over medium heat, cook pancetta until crispy.
Optional: rub pan with garlic before adding meat for subtle flavor.
Turn off heat once done.
๐ 5. Combine Pasta and Meat
Add drained pasta to the pan with pancetta.
Toss to coat in rendered fat.
Let cool slightly (so eggs don’t scramble).

Pour egg-cheese mixture over pasta.
Quickly toss or stir to create a creamy sauce.
Add reserved pasta water a little at a time to loosen and smooth the sauce.
